Prep/Pantry Cook

Rock Harbor Lodge provides visitors accommodations and we employ team members in our dining room, snack bar, gift shop, dockside store, marina, motor boat, kayak and canoe rentals, guided fishing and sightseeing tours, and other fun and fulfilling positions. The Prep/Pantry Cook ensures the Kitchen is able to prepare and cook food dishes for guests in a timely manner by maintaining appropriate levels of prepared foods, ingredients, and similar items.  Prepares food orders accurately and in a timely fashion in a high volume and fast-paced kitchen.  Ensures an excellent guest experience and helps ensure the Kitchen remains clean, organized, and in compliance with sanitation requirements.

ESSENTIAL DUTIES/RESPONSIBILITIES/FUNCTIONS:

Prep Responsibilities:

• Washes, peels, cuts, prepares and cooks ingredients preparing them to be used to create menu items.
• Measures ingredients and prepares them in accordance to recipe specifications.
• Stores food properly and safely.
• Maintains a clean and orderly kitchen by washing dishes, sanitizing surfaces, taking out trash, etc.; Complies with health and sanitation guidelines
• Informs superiors when the ingredients stock is low and when the kitchen tools do not work properly.

Pantry Responsibilities:

• Prepares and cooks high quality menu items; Follows all recipes as written.
• Cook, heat, prepare and adequately stock food stations.
• Follows all kitchen portion control measures.
• Maintains proper food supplies required for the smooth operations of each pantry station.
• Fills out and updates prep sheets as necessary.
• Keeps pantry stations and prep areas clean and organized.
• Follows food preparation, stocking, and cleaning procedures.
• Performs all kitchen operations and procedures in accordance with sanitation regulations and guidelines.

Additional Responsibilities:

• Assists with food running, bussing, dishwashing, and other related tasks.
• Knows and follows all company, Environmental, Health, and Safety Management Programs and policies.
• Works extra shifts and hours as required.
• Assists in other positions and departments as needed.
• Other duties as assigned
